I would use 3/4” marine plywood covered with a layer of 10oz glass, tabbed into the hull for the bulkhead.

Perhaps you could place the side panels straight from the bottom up and have an overhang at the top that would allow for strip lighting.

I immediately thought of the toekick concept, as it gives you more stability when standing at the gunwale and also gives a really clean finished off look to the sidewall. The led lighting is a great plus!
